CHURPI: The Super Food Of The Himalaya’s
Consumed in the Himalaya's for hundreds of years. A staple diet of the nations around this majestic mountain.
A traditional cheese found in the Himalayan regions of Nepal, Tibet, and Bhutan. Made from organically raised Yaks milk* and available in two varieties – soft and hard. Soft is served as a side dish and the hard is to be chewed like betel nut. Churpi is made from buttermilk. The separation process of liquids and solids by straining then pouring into a wooden molds, then large stones are placed on top for over 24 hours. The drying process can take up to 15 days, or it can be dried with smoke in 10 days.
Dried hard Churpi is usually consumed by being kept in the mouth to moisten it, letting parts of it become soft, then chewing it like gum, an excellent masticator!
